Ensalada de Arroz - Rice Salad

One of our favorite salads is Rice Salad.

Here in Paraguay this is a very popular salad that goes good with barbecues or grilled chicken. People make this salad for chicken-dinner-fund raisers, etc. I make it when I am going to have a crowd over. The red and green peppers in it makes it look kind of Christmas-y...It looks nice and is filling.

2 cups of uncooked rice
4 cups of water
3 tablespoons lemon juice
3 tablespoons of oil
Salt to taste
Cook until rice is done. Set aside to cool.

Add the following ingredients and mix well:
1 small onion, chopped
1 small green pepper, chopped
1 small red pepper
1/4 cup Parsley chopped fine
½ cup mayonnaise
lemon juice

I'm going to try this one! I love rice salads even though they are high in carbs.
Are you using up all of your cheese?

Oh yes! This is a fantastic salad! I didn't think I would like it, but once I had it, I just had to have seconds, and thirds, and leftovers (when there was some ONCE!). Thanks for the recipe!
