
One of our family favorites, and a soup many Paraguayan families eat...It's really called Squash Soup here.
It's easy. You put all the vegetables in a pot and boil it down. Add salt. When the vegetables are tender, puré them in the blender. Add milk and "farmer's cheese". It's great!
We had it today with empanadas!

I see squash and celery, carrots, and potatoes? Are there onions? You are supposed to identify the ingredients,Karen!
It looks picture-perfect. Sounds so easy to make. I know the Paraguayan soups and foods are delicious.

There is just squash, carrots, onions, peppers, garlic and green onions. You can add a boullion cube, too, if yoú'd like. You can also add celery or potatoes, but 1. Celery is too expensive and doesn't taste the same as celery in the US and 2. I (personally) never use potatoes in Squash soup, but my friend does. The good part is the creamy milk and cheese after its been through the blender and heated a bit.
